Smell isn't too hard, there are a lot of scented herbs like basil, parsley, sage, rosemary, scented pelargoniums. The first two can be grown from seed, the second two can be grown from cuttings. Lavender, roses.
Sight, lots of pretty flowers, especially hardy annuals that children can grow from seed. Love in a Mist, nasturtiums (they are edible too), pot marigolds etc.
Texture, plants with furry leaves like lambs ears (Stachys byzantina), annual statice which has colourful papery flowers, grasses (strokable).
Grasses are also good for sound when the wind blows through them.
I don't know what they used in the Midlands. The above are suggestions.
