We will have ours this evening with fresh lemon and sugar. The French are always surprised by that, they have them with just sugar or jam or Nutella.
But sometimes we have stuffed savoury pancakes which I buy as they are made with brown flour and are stronger. I stuff them with chicken and mushrooms in a sauce or with salmon and asparagus, or ham and cheese, like they have them in the pancake restaurants "crêperies" in Brittany. Not just for pancake day.
Going the American way and having blueberry pancakes topped with maple syrup. There's a nice recipe on BBC good food.
