    Probably Tragopogon pratensis but can't see the stems and leaves. 

    aka Jack go to bed at noon

    Looked it up on google and the plant head doesn't look the same it looks flatter in their photo, the stem looks like a grass or bamboo with bumps where you would expect leaves to come from. Will still keep searching thanks for your input

    Sorry about google images but Tragopogon pratensis doesn't have flat seedheads, they are perfectly round. Just like yours, stems match description as well. This is my photo, just now, not google

    I think it's good in a garden, that pic is my gardenimage

    Not sure about the cooking, It's obviously related to Tragopogon porrifolius, Salsify, but I've never looked to see what the root is like
