yes you can grow in pots however gardeners tend to plant seed for celery early say Mid March into trays and then prick out into pots or modules once big enough.
Photograph shows celery at back and celeriac in front which was planted in a pot and replanted when big enough.
I will be planting them out late May as they are both frost sensitive

ps you need to prick them out when they are very small I use a chopstick which is perfect
Self blanching celery needs to be grown close together, usually in a block so that they can blanch, unlike trench celery. I'm not sure how you could achieve this in a pot, but might be interesting to try.
