I don't think any Alliums are poisonous [that is to humans, we are unusual as they are very poisonous to most mammals including cats and dogs] but I think there is a very good reason our ancestors chose onions, leeks and garlic to eat - they taste better.
You can sprinkle the flower heads in salads, but I use chive flowers for that. The leaves are already going over. Given the cost of purple sensation, I would let the leaves die down to make the bulbs stronger for next year.. They make good cut flowers for the house if you have excess.
You don't stop doing new things because you get old, you get old because you stop doing new things.
