Elderflower cordial

Anyone else make it? Would be interested in the recipe you use image

    My husband's about to have a go at elderflower cordial and wine image. He got this recipe from The River Cottage site.

    • About 25 elderflower heads
    • Finely grated zest of 3 unwaxed lemons and 1 orange, plus their juice (about 150ml in total)
    • 1kg sugar
    • 1 heaped tsp citric acid (optional)
    Directions

    Inspect the elderflower heads carefully and remove any insects. Place the flower heads in a large bowl together with the orange and lemon zest.

    Bring 1.5 litres water to the boil and pour over the elderflowers and citrus zest. Cover and leave overnight to infuse.

    Strain the liquid through a scalded jelly bag or piece of muslin and pour into a saucepan. Add the sugar, the lemon and orange juice and the citric acid (if using).

    Heat gently to dissolve the sugar, then bring to a simmer and cook for a
    couple of minutes.

    Use a funnel to pour the hot syrup into sterilised bottles. Seal the bottles
    with swing-top lids, sterilised screw-tops or corks.

    I make Elderflower cordial ,there is a abundance of flowers this year and so hope for plenty of berries at the end of the season to make wine or use in pies.image

    Sunnydayz don't use that one. My friend tried it and it scorched the flowers. Instead of a clear liquid its brown, doesn't taste so good either.

    I found a great recipe on Brew UK for Champagne. Hugh Fernley Whitinstone made it on one of his programs.

    I only make a small amount at a time,I collect the flower heads about 12,wash them in cold water(run under tap) boil some water add to jug(2 pints) and flowers plus sugar to your liking with half a fresh lemon.stir well,leave to cool and leave for a day,then strain into clean jug ,I like it this way but some times will use white lemonade but prefer it as it is after being in the fridge to get really cool with ice and drink with in a day or two.image

    And doing it that way doesn't turn it brown? I have always let water cool before adding anything then chuck everything in and leave it to sit for 3 days. As I said my friend did it your way and the cordial is brown and doesn't have much flavour image

    Now I don't want to be acused of plugging this site I've only ordered 1 brew kit for my husbands valentines present from them! They were so helpful.

    DID  she remember to take the flowers off the stems as these are poisonous and will taste bitter and look brownish .
