Have you hacked out the centre or has it shrunk back ? So long as you have a good amount of flesh in there, you should at least have a meals worth.
I seem to remember Spaghetti squash doesn't actually look like spaghetti until you cook it.
If you are a fan of pumpkin pie ( I know I am ), go for the Autumn/Winter stuff...........heavy and full fleshed they are ideal. Butternut are easy , Turks Turban are attractive........lots to choose from.
