I've seen it done in orchards - if I remember correctly they were plum trees - branches weighted down to promote development of fruiting spurs and to facilitate picking - but I know nothing about the technique.
Just Googled - there are several videos on Youtube, but as I'm not experienced in this I wouldn't be able to recommend one to watch - have a look at all of them and see which makes most sense to you.
