Greenhouse growing

I retired last year and bought a greenhouse that is heated to 7degrees most of the time, I started growing seeds in a heated propergator, my question is when do you transfer the new shoots into pots and do I cover them with lids or just leave them open to stop damp off.

-once germinated you need to remove the pots/trays from the propagator.
Once the plants are big enough to handle they should be pricked out into pots. But what plants are they? If tender annuals they will need more warmth while they are such babies.
