To cut back or not

I have a lot of plants (plugs from GW 48 Perennials
)potted on and now in the green house to overwinter. The Achillea Cassis look really leggy. Do they die back naturally or should I cut them back or leave them alone? The catmint has gone a bit mad and the Geum are quite big too. Also do we continue to water the plants in the greenhouse other than just not letting them dry right out?
