squash and pumpkins and tree dahlia

Hi, Fairly  new  to  growing fruit  and  veg, I  have  grown some Baby boo Pumpkins from seed and  the  plants were finally producing female  flowers last month, these  have  been pollinated and are  growing, when will i know when they are  ready  to  be  harvested?

I also  have  a couple of grafted butternut  squash plants, I  have had  about 6 squash off of  them and most  of the plant is dying yet  the tips are still producing flowers- male and female- should i  leave the plants in the ground until there  is a frost?

My  last  question is has anybody  ever grown a tree  dahlia before  and  if so how do you  care  for it  over winter?
