Lemon balm leaves - what can i do with them?

Hi

My lemon balm has grown like crazy this year and i would like to give any use to the leaves i have. Any idea or recommendation on what i can do with them? i heard about tea, lip balm etc but thats not really my piece of cake

    If you're in to cooking I'm pretty sure you can use them to infuse liquids such as milk, cream, sugar syrup, vodka, gin etc. Check Mr Google for help with recipes.

    I've used lemon verbena like that for ice cream, ice cream syrup, and lemoney gin.

    Yes,I was going to say, chicken,or  fish, overlaid with the leaves,made into a "parcel" with greaseproof paper,oven or BB Q. Drop into ice cubes, for adding to drinks. My grandaughter adds them (mine) to her school water bottle.

    Yes that's what we used ours for  lovely mild flavour.

  • You can also use them to line a cake tin - I have used 2 shallow tins to make a Victoria sandwich ... imparts a mild lemon flavour. 🙂

    I use them for breaded chicken or fish fillets. I chop them up with fresh breadcrumbs in the Magimix, even better with some thyme, dip chicken in beaten egg and coat with the herby breadcrumbs. It's best to use the young tips and best with new growth.

    I use them in tea, and also mix it with other herbs which I chop them up together and freeze them use them in stir fries, gravy, and to make  salads mixed to make a dressing, and dips my lemon balm hasn't been so good this year it's been to dry.
