How to keep cucumbers fresh

We have just harvested our first mini cucumbers - Beth Alfa. I have noticed, after a day in the fridge, that they don't feel as fresh as they were - they begin to feel slightly soft. Has anyone else found this or is this a characteristic of these cucumbers? We have had supermarket cucumbers in the fridge for a week and they are usually still very fresh.
Any thoughts?

Supermarket cucumbers are usually wrapped in polythene you could try wrapping yours in clingfilm and that might keep them firm.

Maybe you’re harvesting them too small,  I took the first ones off a bit smaller, they did go soft quickly,  now I leave them to get bigger and they’re in the fridge for ages.

I haven't wrapped them in anything they're just in a little cardboard box.

  • Yes, I harvested mine at about 4-5" - I'll try leaving them to get a bit bigger. Mine weren't such a nice shape as yours ... they were a bit skinny!

That was the size of the first few I took off,  not really much good, didn’t even have enough for a salad,  let alone my snails😀. You didn’t leave them to grow long enough 🙂

  • But I thought the Beth Alpha were mini cucumbers?

So they say,  but we’ve both found out what happens if you want to keep them for a few days.  Trial and error for me as well,  first year growing them,  I’ve never bothered with many veg.

Cucumber soup is delicious @ShepherdsBarn, there is a recipe on the Recipe thread and it freezes well for the winter. You can adapt it a bit more if you like with more herbs and spices.
