Wait until they're red - the redder they are, the better the flavour and perfume. As to how long it takes, that depends in the environmental conditions, but with the warm weather we're getting it usually only takes a few days once they have stopped swelling in size.

Always best to let them ripen on the plants for the reason given above. If you are worried about birds or other creatures getting them before you do, you can ripen them indoors but ONLY once the fruit shows signs of beginning to turn colour. Not ideal but can be done if necessary.
