Grasses are monocots and have just the one leaf rising from a seed, unlike dicot seeds which have a pair of seed leaves and then grow true leaves.
So your seedling leaves in the pictures are true leaves. However I would wait until they each have several leaves and a spreading root system before pricking out and potting on.

It largely depends on the grass, and what you intend doing with them, but 2 in a five or six inch pot would be fine, a smaller pot would have a single one.
It's a place where beautiful isn't enough of a word....
