Olive Trees

Hi,

I was lucky enough to be bought two olive trees for my Birthday. I noticed that the tops of the tree (main trunk) has been sawn off. I wondered if this was normal and what purpose it solved? Im not sure about the exact variety of olive tree, but am I right in thinking I should put a fleece around them when the temperatures drop below 0?

    They were probably about 12ft trees and they've been pollarded to create a short bushy tree with a decent trunk.
    I've had one in a pot on my patio for around 15 years, I've never fleeced it.
    Yours do seem to have dropped a lot of leaves
