Taking cuttings to over-winter

I have some bedding plants, trailing verbena and osteospermum which I would like to try and take cuttings from for next year. How easy is it? Do they root in water, or is compost better?  I have a draughty greenhouse or a fairly sheltered lean-to to keep them in, or perhaps the house if that would be better?

You can take osteospermum cuttings, do them into gritty compost, but you could put the whole plant, in its container, in the greenhouse.
