White Enorma Beans

Hi all, happily harvesting the pods but wondered about leaving some as I've heard that when they turn brown you can collect the beans inside. Is this true and how do you store them prior to cooking?

    When the beans are hard and dry, you can store them in a jar or similar.
    A trowel in the hand is worth a thousand lost under a bush.
