OK, so here are my results of using the acid on some offcuts.

It seems to have removed the mortar but I can't get rid of those areas on the side circled in red. Are they mortar stains or are they something else? And any idea what to try to get rid of them if possible?
Looking at them closer I think those in the last photo are the wrong way up and they were originally layed correctly. since you now have a thin overhang on some of the edges which doesn't seem correct.
I think the marks at the edges are weathering stains where water has run under, The only way I can see to get that off would be grinding the stone down.
I had several areas of paving paid laid a couple of years ago. The installers recommended these people for maintaining/cleaning advice- https://www.extensive.co.uk/ I did email them with a question and got an extremely detailed and helpful reply. Worth dropping them a line or calling them
