Grass tree flower

Can anyone help me, I planted this Xanthorrhoea Australis over 15 years ago and this year it has put up a flower spike, it is over 6ft tall now and I’m not sure what to do.

The leaves are deadly, so sharp but I believe the aborigines used them as tools
