Elderflower champagne - pink?

Can I make elderflower champagne with the pink flowers from my Black Lace elderflower?

    No reason why not, but you might need to add a little food colouring to make it look pink :)

    I've just had a sniff of my black lace and the scent is quite weak compared to those in the hedgerows.

    Yes, Black Lace makes lovely cordial, don't need to add colouring. I don't make Champagne.

    Just harvested elderflowers for the annual wine. The perfume is lovely and whilst we cut many flower heads we leave many more so that we can make elderberry wine later in the year.
    Our black lace is still too small to try and harvest the flowers but what a great idea.
