It looks very much like bay - rip a leaf and have a sniff.
I'm say there's very little chance of diggin it out. It's been there too long and you'll not be able to get sufficient roots out.
Ps - if you're removing the paving around it then there's a chance you could move it. But you'd need to cut a lot of the top growth off or the roots will not be able to support all that top growth
Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad.
Get those paving stones out first, will enable you to take more root. It's very Mediterranean so shouldn't be too much transpiration so I reckon a fair chance of keeping it. Get it into huge pot with moderately fertile well drained soil....keep semi shaded a while until you're happy it's going to survive. Good luck.
