A moment of madness

I promised my granddaughter I'd plant and grow her some ginger. So she brought me some roots she'd been given. I planted them in pots, in my polytunnel, and they've grown!!
However, what do I do with them now.they are about 3in tall in pots, looking good. I am in mid Lincolnshire near the coast, It gets cold and windy, I do have a small greenhouse that I can maybe heat, but bearing in ming=d the cost , should I maybe 'lose' these plants and just buy some plants next year.
