Fruit cordons or espalier

Hi, recently had to get rid of a classic Victoria plum tree and Stella cherry tree after 14 years of Good harvest. Especially the plum. The cherry started to struggle in the last couple of years time for some new fruit trees. The plum tree finally gave way and split its main stem. 
There's not masses of space and it did used to get slightlycongested but I think it would be better to get a couple of cordons or espalier trained tree for air flow.The area gets full sun for at least 6/7 hours. Any advice on whats best as a cordon variety? Or espalier? Also a supplier? Thanks
