advice on starting bonsai

I have just been given  selection of Bonsai pots and would like to give it a go. I have several self seeded trees/shrubs, quite small, in the garden, what would be a good one to try and do I keep them outdoors?
Do I need special compost?

    Last year our garden club organised a Talk on Bonsai , something I have thought about myself as we get lots of self seeded trees in garden 
    In facts I’ve got 3 trees in pots in garden and put others in hedgerow at allotment 
    The specimens he brought could be left outside but this was the problem 
    They needed constant watering and in the good old days ie pre Covid-19 we could easy have 5 holidays a year 
    Although I have friends that water for is I felt that would be to much to ask
