Pear and Apple trees

I move into a my house two years ago guy before me planted plenty of trees all unfortunately very overgrown I left them for first year and then decided to try to prune them in winter I done three Apple 2 pear but only 1 pear bears fruit the others have sprouted shoots everywhere and no fruit can i rectify this for next year.
