To Dwarf or not to Dwarf?

I have a long stretch of trellis in my garden that I recently built. Amongst other things, I would like to grow a couple of fruit trees against it and possibly fan or espalier them. The trellis is around 6ft high. Is it important to use Dwarf varieties in this situation or does it not matter? The reason I ask if that I grew an apple tree from a seed which I would like to plant somewhere. I have had mixed opinions from friends and relatives, who also garden, around whether a non-dwarf variety would be too difficult to keep under control and maintain at around 6-7ft high. I would be very much appreciative of any views/advise one way or the other on here.
