Onion seeds

Hi can anyone offer advice

I've sown onion seeds which are growing nicely (and now look like little leek plants! )

My Question - could they be used as spring onions if not left to fully grow - ?

 If you have far too many, you can use the thinnings as spring onions. I sow individually in root trainers, they are hardening off to go out now.
