Gypsophilia, Echinops and Eryngium alpinum- Which is the root and which is the shoot?

I'm hoping someone can advise as there are lots of complicated answers on here.
I bought Gypso, Echinops and Eryngium alpinum roots for planting, but I can't tell which end is the root and which is the shoot. All three plants have white tips coming out one end, but the other is different.
- The gypsophila look like a brown stick with with bits on one end
- The other two have slightly whispy brown root looking ends, but the other ends have white, root looking ends.
Which end is the root and which is the shoot please?
