If you are going to plant them out then one per module as that will usually produce two plants. I put them out 2"-3" apart and never take more than one leaf per plant so that I get the beet as well (only me to feed and I'm a bit mean careful).
For smaller leaves, now called micro-greens I believe, I just put them in a standard seed tray with around a 0.25" ish gap as they are only going to get practice as plants Use the same for peas and broccoli when I just want leaves.
Some people treat them like cress and grow on paper I believe, never tried that so can't comment.
