can anyone tell me what is attacking my hedge please.

    I'm thinking Caterpillar damage. Sometimes hard to detect. Provided you have grown your plants well, you can just prune out the damaged sections and feed your plants and hopefully they grow back stronger.

    What’s the best way to get rid of caterpillars other than using chemicals?

    On a shrub like yours, it's best just to prune out the damaged branches/leaves, and keep an eye out for any under or on the leaves and remove them promptly.
