Problem species? Identification & treatment please
I have an ever increasing and resilient plant (weed?) growing I need to get rid of. I has broad green leaves and stalks, pinky white underground shoots and and a deep red bulb. I have also dug up a root like ginger which is deep red again. Can anyone help me identify these, and give me thoughts on how to eradicate them.

Some people pay good money for it. It’s in my garden. Quite pretty when it flowers. A bit of a spreader but I just dig it out if it starts to get a bit bolshie.
Would love to see flowers.
I wonder if it is Bistorta officinalis???? Previously called Persicaria bistorta

Here is a short video clip of the persicaria I have flowering but not sure what variety it is.
if people pay good money for this then I have found my fortune! The back of my garden is riddled with it and it’s difficult to dig out. I sprayed a clump with weed killer last week and so far it’s had zero effect! I’ll do some more research now I (you) have potentially identified it. Again, many thanks 👍🏻👍🏻
