Hi mxy line manager told me to take photos of bed cards which has information about a certain plant and then memorize its height and flowering time.   I want to keep a record of the plant bed cards i've taken photos of and make a folder naming it Spring plants.   I'm not sure how to do this, should i drag and drop the bed card image into microsoft word or make a table?

I dont know if a spread sheet can contain photos but that might work if you know how.

If it were me I would make a folder on the computer contain separate folders for annuals, perennials etc and put the photos in there.

so folders within a folder?   What software should i use to drag photos into??

Yes you could use either Word or Excel for your cards. You can pull photos into either - just drag and drop.
I just done a quick one in Word to give you an example-
