Oca aka NZ yam. Recipes?

OH has harvested the first of our experimental oca crop in the polytunnel.   It looks good and healthy and is a very colourful pink but I'm having trouble finding recipes.

Anyone else grown it?  Cooked it?

    My brother in Queensland grew it for the first time last year.

    All I remember is that he said he wouldn’t be growing it again.😊
    Apophthegm -  a big word for a small thought.

    OK.  I had the same reaction to asparagus peas - pretty but horrid.

    I've found one recipe from NZ which roasts them with a bit of duck fat, orange zest and juice and a bit of honey.  Trying that tomorrow and will let you know.

    I have had it roasted which was ok. I shudder at the expression "hacks" rather than "tips" but l found this

    Thanks @AnniD.  Some odd ideas there!  Definitely not gnocchi as I don't like them in any shape of form but hadn't occurred to me that oca could be mashed.  One to try.

    i've roasted them, chipped them and grated them raw onto salads. all ok but not really worth them time and space to grow them really, the best thing is raw leaves in salads

    Thanks.  The leaves have all died down now but if they re-sprout I'll try some in salads.
