Growing Leeks

My leeks are going to seed. What should I do, cut the flowers off and let them continue to grow or harvest them?

Harvest what you can, the centre of the plant will be a solid stem, not much use.

I agree, the solid centres of those with a flowering spike are virtually useless in the kitchen.  Don't waste the leaves (choose the best though, usually closest to the stem) if most of the crop is affected;  Finely chopped (and then frozen if storing) they are great in cock-a-leekie soup or added to stews, casseroles and similar. :)

Chopped finely they are also good as a substitute for spring onions in a salad.
