Weeds on a slate and earth Hill

As per the image
we have weeds growing on this slate and earth hill.
at the moment my hubby try’s to strim them but it’s a bit dangerous given our age and the steepness of the hill.
we don’t really want to use weed killer as we love our little bees that visit.
does anybody have any experience of dealing with this sort of thing?
