Pyracantha?
The heading makes it sound like I know what I'm talking about!
The plant seems to flower every other year (or that could be because of how I'm hacking it about), then after flowering the berries slowly turn through pink to a deep red. Stunning.
Is it a pyracantha and if so any ideas on what type? The berries do look like this: https://www.rhsplants.co.uk/plants/_/pyracantha-coccinea-red-star-pbr/classid.2000033497/
...the stem is thorny to a degree.

Difficult to determine the variety, but they all have the same requirements and care. Pretty easy to maintain.
Great plants for wildlife too. I enjoyed watching a very fat wood pigeon eating the berries on one of mine last year

Firethorn isn't a variety, GD - it's just the common name for it.
Yours is looking great - the bees go mad for them when they flower.
Mine are a bit behind both of yours, but they're covered in buds. I always feel it's the start of summer here when they open
