can i grow plums as step overs?

i've finally been given an allotment and i'm growing apples and pears as bed dividers as step overs,

now i know that usually you grow plums as fans for best fruiting, but can you grow them a step over-like trees?

You'd have to keep them low or you'd risk bashing your plums as you stepped over.

Tradition is just peer pressure from dead people
