Fancy a Lollipop this Easter?

Hi
We have a healthy, mature olive tree, approx 12ft by 4ft. It looks like a big blob and is hiding a view.  I was going to attempt to create a 'lollipop' so the view can be seen through the tree - any thoughts/advice?

    Seeing as it’s a bay tree you can strip all the bottom branches off if you want too, I keep  mine free at the bottom, not to creat a lollipop effect because I don’t like that, but just so I can plant my hellebores underneath.

    I do the same with my 20+ year old bay.
    In London. Keen but lazy.
