Grajean I think possibly Ammi Majus an annual , exactly what we had grown from new seed ourselves for the first time. Late summer flowering and towering umbel of white flowers stunning ! And we saved the seed for sowing Springtime

It could have been Ammi majus, aka "Bishop's Flower". Orlaya grandiflora is another similar plant.
Since 2019 I've lived in east Clare, in the west of Ireland.
