Should I keep watering my lemon tree through the winter? It lives in my insulated greenhouse.

Yes, but make sur eit can drain thoroughly and not sit with wet roots.  My lemon and limquat produce fruits thru winter and start early with flowers too so I keep them watered and they get a sprinkling of specialist citrus food on their compost too.
