Once the skins begin to change from dark green to a lighter green while on the plant, the ripening process has started, at this stage you can then remove the toms and ripen indoors

Hi tripleotransport - you can also cook and eat green tomatoes - they are rather sharper than their red versions but you don't have to worry if they don't all ripen.
