Turned out to.be a pumpkin when to pick

Hi I went to a garden centre some months ago ask asked for a courgette to plant my grow bag. It was small but a few weeks later it started growing but instead of growing upwards as previous courgette done I started spreading creating vines so I looked on the net at the name of the plant which is cucurita maxima)jaun gros de paris) it turns out to be a pumpkin
I never grew pumpkin before but will get another next year
I did have a little one ealier but it went soft and Brown maybe it was near to floor but as you see from pic I have another but when do I pick it?or do I wait till it turns whitish / green? and if I leave it will that be the only one?
I did feed it but it didn't respond well so now all I do make sure its watered well

The pinkish-yellow fruit can grow to over 50kg. round with flattened ends, and have light ribbing.
Needs a good sunny spot with plenty of water, the skin should now be getting hard or be hard once it is they can be cut leaving the stalk on and will then keep for a few months or even longer.
They are good keepers and are good in pies, soups, and baked / roasted
