I came across a damson tree whilst walking with my dog last year. Plenty on it that were just beginning to ripen. I grabbed a few and left them on a windowsill that gets some sun and they did ripen in about a week, though probably not as sweet as if they'd been tree ripened. I imagine it would work with plums too.
Someone has beaten me to it this year:)

When I go to the allotment tomorrow I will take a few and do some trials.
