Anyone can identify these plants and this prunning technique?

The main thing that I like about the tree is the shape of its leaves and to be honest I much rather prefer it in a bushy shape rather than single stem tree. Considering it is a fast growing tree I was thinking along the lines of having a single stem to about 8-10 feet tall and then by prunning quite a bit every year I would force side branches to grow. I might be wrong though.

It's a matter of scale I suppose but it looks smaller on those pics.  I prefer the upright one myself anyway.
