Garden in France

I bought, like so many expats a beautiful house in the South of France. I have 2.5 acres of predominantly pastur land. Although I don't have gardening experience (my training is in interior design) like so many the challenge is what I can grow according to the climate. I have a landscape plan in mind which will include a lake, but, I have no idea where to start with the planting. Any advice would be so welcome.

    The South of France is rather a large area.  Can you be more specific about where you are, how exposed to wind and how much rain you get in a normal year as well as whether your soil is sandy/clay/loamy/stony and acid/alkaline or neutral?   How hot in summer, how cold in winter?

    There are a few of us in France who can help but before you plant anything you need to address the soil and make sure it's right for the plants you want and vice versa.
