my william pear tree produces well, but a lot of the pears are attacked by some creature inside, I don't know what. What organic method can u recommend

Pick up (or pick off) all infected pears and burn them or dispose of in council bin. That cuts down the amount of new insects in the vicinity.
Hang fat balls for the blue tits among the trees . They will pick off insects through the winter.
