hard to see from the pics but white bryony looks favourite.
Be careful when you dig it out to excavate around the root which will be like a very large parsnip (think it is also known as Devil's Turnip). It can grow back from a snippet left behind and it will snap so find the source of the stem, move the soil away and you'll soon find the root top. dig down with a trowel to get the whole root out if you can.
