Collecting flower seeds

Some of my Cerinthe flowers have gone to seed and have formed seeds in the flower heads. Will this seed be ripe or do I just leave the flower heads on the plant. I want to collect some of the seed to give to a friend. If I cut off the flower heads now and put in a paper bag and leave to dry out will the seed ripen.
Could I do this with all the flower heads that I want to collect seed from. Or is it best to leave them on the plant till it's died back?

Cerinthe seeds are black when ripe, leave them where they are til that happens

Thanks nutcutlet, they are black but seem firmly attached to the plant at the moment.
You need to leave them until a gentle shake causes the seeds to drop.
Tie a paper bag over the seed head and the seeds will drop into it when ripe.
